Dinner is Served

Made  Cheesy Zucchini Enchiladas for dinner last night.  They were SOOO yummy.  You may be able to make them with soy cheese or something like that (have you tried soy cheese?  doesn’t sound that good).

What do you think?  Looks pretty good, right?  Doesn’t really look like the picture in the blog, but this girl has all day to cook and I have two seconds so I won’t harp on it too much.  I MAY have put too much cheese and sauce and turned a low-fat recipe into a not so low-fat one.  Oh well!  


I think i may make Chicken Cordon Bleu tonight. 

I was also recently sent a link to a website called Smitten Kitchen.  They have pretty good stuff too.

The same person also sent me this link.  It’s a peak-season map from Epicurious.  Its pretty nifty.  Kind of depressing that it says that New York’s growing season is currently dormant and Florida has fun things like star fruit, cantaloupe and peppers available.  Hopefully that won’t be for long – looks like its going to be a warm (50s – 60s) and sunny this weekend!
