What’s Better Than Cupcakes?

Actually, what is better than PUMPKIN CUPCAKES!!???  Pumpkin cupcakes that are super easy to make and pretty healthy, that’s what!  I passed this along to Ellen earlier this week and she made them and LOVED them.  I’m going to try to make them this weekend – especially since today is the first day of fall!  (thanks AGAIN

Pumpkin Cupcakes with Pumpkin Spiced Cream Cheese Frosting

Pumpkin Cupcakes with Frosting
Calories: 121.1
Fat: 2.8 g
  • 18.25 oz Betty Crocker Golden Vanilla Super Moist Cake Mix*
  • 2 tsp pumpkin pie spice
  • 1 cup canned 100% pure pumpkin
  • 1 cup water

For the Pumpkin Cream Cheese Frosting:

  • 8 oz Philadelphia 1/3 fat cream cheese (do not use fat free)
  • 1/2 cup pureed pumpkin (canned is fine)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 5 tbsp packed brown sugar


Preheat oven to 350°. Line a cupcake tin with cupcake wrappers. Combine cake mix and pumpkin spice in a large bowl. Add pumpkin puree and water, mix about 2 minutes.
Fill cupcake liners 2/3 full and bake about 20 – 25 minutes, or until a toothpick inserted comes out clean.

For the frosting, combine the cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice and brown sugar until smooth. You can use a spatula to ice the cupcakes or pipe them which may require making more frosting.

*Betty Crocker has reduced their cake mixes, so read the labels on your box. Dunkin Hines still carries 18.25 oz boxes.

Where to Start?

I have too much to report upon, this is the abbreviated version.

The first woman in the Emmy fashion recap is the coach’s wife on Friday Night Lights.  I am so sad that the show is finished.  She was half of the best married couple on one of the best TV shows. I hated Juliana M.’s dress.

One should be very blonde when on vacation, so yes, I like Sienna’s color.

Today I finished a sunflower quilt for Ruth.  (I always think of Kim when I think of sunflowers?  What is her actual favorite flower?)


I’m your Mother, I always think you look beautiful, even when your hair is out to here.  (Yes I can see you holding your hands out.  Mothers have eyes in the back of their heads, and in NYC.) I LOVE that bright colors are in, by the way.

New York Women

My morning involved getting woken up by crazy drunk people coming home at 4am, then getting woken up by Chet at 4:30am because he was biting himself (poor thing has awful allergies), then finally getting up at 5am, walk Chet, feed Chet, shower, iron, get dressed, get Chet all comfy in his little area (gathering his toys, freshening up his water, giving him a treat – he has the life!), walk to the subway, take two trains, walk to the office, print and bind a million presentations, take the presentations halfway across town to a client, get back to the office and sit down at my computer to start my day . . . all this by 7am.  Just a normal morning for millions of other ladies in the city . . . but, I just don’t get how they look so darn good doing it.  I mean, I have a pretty cute outfit on but my feet are already killing me, and my hair is out to HERE (can you see my arms stretched out!?) because it’s SO gross in the city today (rainy, humid, kind of warm but kind of cold) I have bags under my eyes from lack of sleep (don’t get worried – I’m fine!).

Maybe one day I’ll have myself together enough to look like one of these ladies – well, I don’t think I’ll ever want to wear really short shorts with heels, but you get the idea . . . (pictures courtesy of The Sartorialist)

They also look like this in San Fran (Atlantic Pacific).  How awesome is that pink color on her?! And she snagged a Missoni for Target dress – jealous.

Even the Man Repeller has herself together (in her own man repelling ways) on a rainy day.

I’m getting my hair done tomorrow night . . . what do you think of Sienna Miller’s color in this picture?  I think that’s what I’m going for this time.

Fall is in the Air

This weekend was spent at home, which was great.

Friday night we spent a few hours at Two Door Tavern (which we’ll, most likely, frequent more – especially once Feb comes around!) and rented Unknown with Liam Nelson.  It was entertaining.

Saturday morning we got up early and played 18 holes at Split Rock in the Bronx.  We played with the sweetest (but OLDEST) lady golfers in NY. It took us 6.5 hours just to play 14 holes, which is when we gave up and went home.  But look at this – pretty impressive land being just 10 miles or so away from our place.  (This was actually after I hit my best drive of the entire day).

We’ll definitely be back again.

Saturday night we went to the Widespread Panic concert on the waterfront (last one that will be held there, ever).  It was pretty fun people watching (not to mention very convenient being only 2 blocks away).

Then met Katya, Unity, CK and Che at Isa (the new hot spot in Williamsburg) for dinner.  We ended up not getting a table (after making reservations AND waiting an hour and a half) so we stopped by the taco stand at La Esquina and all went to CK and Che’s and ate at their dining room table – it was just as fun!  This is the entrance to the little backyard/taco stand/beer garden for La Esquina.

Look how cute Isa is, though.  We’ll go back, but maybe on a Tuesday night this time.

On Sunday, Vicki and I went to The Taste of Williamsburg and Greenpoint Festival.  It was right on Kent, so very convenient and VERY TASTy.

The Empire State Building looks fake in this picture.


Happy 86th Mom-Mom!  Spoke to her yesterday, she sounded great.
