How nice to have a blog so we know where to find our favorite recipes.

Chipotle-Lime Soup with Chicken

1 small sugar pumpkin , butternut squash or sweet potato, cut into chunks

1 tbsp olive oil

1 med onion, coarsely chopped

2 garlic cloves, minced

2 qt chicken broth

2 chipotle chilies, chopped

1- 1/2 c fresh or frozen corn

1 can black beans, rinsed

2 c shredded roasted Chicken breast (rotisserie chicken)

3 tbsp lime juice

1/2 c cilantro, chopped

Saute onion and garlic in olive oil.  Add chicken broth and chipotles.  Simmer 2 minutes.  Add corn, chicken, beans and simmer 10 minutes.  Add sweet potato and lime juice.  Simmer 3 minutes .  Sprinkle with cilantro.


Chicken Curry

2 tbsp veg. oil

1 1/2 lb boneless chicken breasts, cut into large chunks

2-3 tbsp red or green Thai curry paste

1 can coconut milk

2- 1/2 tbsp Thai fish sauce (original recipe says “it stinks, but you HAVE to put it in”, and I agree)

2 tbsp brown sugar

1 lb new potatoes

1/2 tsp salt

2 tbsp lime juice

1 bunch cilantro

Lightly brown the chicken breasts in oil and set aside.  Brown the curry paste in the same large pan.  Pour in coconut milk, fish sauce, brown sugar, salt, potatoes and chicken.  Bring to a boil, let simmer until the potatoes are soft.  Before serving, add lime juice and sprinkle with cilantro. (I prefer my curry with some fruit so I add raisins or craisins or manderine oranges etc.)
